Shirazi Salad

From the city of poets and gardens comes Iran’s essential salad. Cucumber, tomato and onion are diced almost impossibly fine, then dressed simply with lime juice, olive oil and dried mint.

Its sharpness is the perfect counterpoint to charcoal-grilled meat — which is why you’ll find it beside nearly every kebab in Iran. Order it with any grill and alternate bites; that’s the way it’s meant to be eaten.
