Joojeh Kebab

Joojeh is the kebab every Iranian grew up with. Chicken breast is steeped for hours in a marinade of saffron, yogurt, lemon and grated onion, which tenderises the meat and gives it its unmistakable golden colour.

We grill it hot and fast over charcoal so the edges caramelise while the inside stays juicy, then serve it the traditional way: over saffron rice with a grilled tomato, fresh herbs and a squeeze of lemon. Simple, fragrant and endlessly comforting.
