Faloodeh may be the world’s oldest frozen dessert — Persians were making it two and a half thousand years ago with mountain ice. Fine starch vermicelli is frozen into a rose-water sorbet, creating a texture that’s somewhere between granita and silk threads.
It’s served with a squeeze of fresh lime and a scatter of pistachios: floral, icy and startlingly refreshing after a charcoal feast. Pair it with a pot of Persian tea for the full Shirazi ending.
